Pesach Banana Cake
350 degrees; one 9x13 pan.
14 eggs
2 c. sugar
1.5 c. potato starch
8 oz. ground walnuts
12 medium bananas, very ripe
Puree bananas in food processor. Cream eggs and sugar together in bowl. Separately, mix potato starch with a little of the egg mixture, then add to main egg bowl. Add bananas and ground walnuts. Bake in greased pan.
